Pico de gallo

  • 3 large tomatoes, diced
  • 1 medium onion, diced
  • ½ medium green or red bell pepper, diced
  • 2 jalapeno or other hot pepper (adjust to your preferred spiciness)
  • A handful of cilantro, roughly chopped (use as much or as little as you like)
  • Juice from ½ of a lime
  • 3 cloves garlic, minced
  • 1 teaspoon salt

Optional ingredients: 1 avocado, peeled and diced; 1 small cucumber, peeled and diced

Dice tomatoes, onions, peppers and optional ingredients. Chop cilantro. Place all ingredients in a bowl and add salt, garlic and lime juice. Mix well, cover and let sit for 3 hours before serving to allow the flavors to come together.

Makes about 8 servings

Like a lot of flavor? You can roast your tomatoes to add great flavor to your salsa. Heat a frying pan or skillet over medium high heat. Place whole tomatoes in the cookware and toast the outside until the skin begins to break and split. Remove from heat and let cool a bit before dicing.

Want a smoother salsa? Just put all this good stuff in the blender!
